作菹藏生菜法第八十八
蕪菁菘葵蜀芥鹹菹法
收菜時即擇取好者菅蒲東之作鹽水令極鹹於鹽水中洗菜卽內甕中若先用淡水洗者葅爛其洗茱鹽水澄取清者瀉著甕中令沒菜杷即止不復調和菹色仍青以水洗去鹹汁煮為茹與生菜不殊其蕪菁蜀芥二種三日抒出之粉黍米作粥清擣麥麵䴷作末絹飾布菜一行以䴷末薄空之卽下熱粥清重重如此以滿甕為恨其布菜法每行必莖葉顛倒安之舊鹽汁還瀉甕中菹色黃而味美作淡菹用黍米粥清及麥䴷末味亦勝
