折粟米法

取香美好穀脫粟米一石

於木增內以湯淘腳踏瀉去潘更踏如此十徧隱約有七斗米在便止漉出曝乾炊時又淨淘下饋時又淨淘下饋時於大盆中多著冷水必令冷徹米必以手按饋良停之

投飯調漿一如上法粒似青玉滑而且羊

勿令有碎雜折米堅實必須弱炊故也不停則硬又甚堅實弱炊作酪粥者美於粳米者焉
