以成調肉臛中汁沸油豆粉
如環餅麵先副溲以手痛採令極輭熟更以臛汁漠令澤鑠鑠然割取牛角似是面大鑽作六七小孔僅容粗麻綫若作水引形者更割牛角開四五孔容韭葉取新帛細細雨段各方半寸依角之小鑿去中央綴角著細
裏盛溲粉斂四角臨沸湯上搦出熟煮臛澆著酪中及胡麻飲中者真類玉色稹稹與好麵不殊
