食次曰苞牒法
用牛鹿頭肥蹏白煮柳葉細切擇去耳口鼻舌又去惡者蒸之別切豬蹏蒸熟方寸切熟鷄鴨卵薑椒橘皮鹽就輒中和之仍復蒸之令極爛熟一升肉可與三鴨子別復蒸令輭以苞之用散茅為東附之相連必致令裹大如韓雍小如人腳暉腸大長二尺小長尺半大木延之令平正唯重為佳冬則不入水夏作小者不進用小板挾之一處與板雨重都有四板以繩通體纏之兩頭與楔楔
之二板之間揳宜長薄令中交度如楔車軸法強打不容則止懸井中去水一尺許若急待內水中時用去上白皮名曰水臊又云用牛豬肉煮切之如上蒸熟置出白茅上以熟煮雞子白三重間之即以菜苞細繩概東以兩小板挾之急東雨頭懸井水中經一日許方得又云藿葉薄切蒸將熟破生鷄子幷細切薑橘就中和之蒸苞如初莫如白臊一名進牒是也
