煮白暢法
用白牙散蘖佳其成餅者則不中用用不渝盆渝則陽黑釜必磨治令白淨勿使有賦氣釜上加輒以防沸溢乾藥末五升殺米一石米必細師數十徧淨淘炊為飯難去熱氣及暖於盆中以蘖末和之使均調臥於開甕中勿以手按撥平而已以被覆盆甕令暖冬則穰亦冬須竟日夏卽半日許看米消滅離甕作魚眼沸湯以沐之令糟上水深一尺許乃止下水冷訖向一食頃便埃謂取汁煮之每沸輒益兩枸光宜緩火火急則焦氣盆中汁盡量不復溢便下輒一人專以枸揚之勿令住手手住則暢黑量熟止火良久向冷然後出之用梁米者暢如水精色
