齊民要術:蒸集法第七十七(电子版)
食經曰蒸熊法取三升肉熊一頭淨治煮令不口熊半熟以豉清漬之一宿生秫米二升勿近水淨拭以豉汁濃者二升漬米令色黃赤炊作飯以蔥白長三寸一升細切鹽橘皮各二升鹽三合合和之著亂中蒸之取熟蒸羊肥鳩鴨悉如此一本用豬膏三升豉汁一升合灑之用橘皮一升
蒸脫法好肥腕一頭淨洗垢煮令半熟以豉汁漬之生秫米一升勿令近水濃豆汁漬米令黃色炊作饋復以豉汁灑之細切薑橘皮各一升蔥白三寸四升橘葉一升合煮飯中密覆蒸兩三炊久復以豬膏三升合豉汁一升灑便熟也蒸熊羊如腕法鳩亦如此
蒸鷄法肥鷄一頭淨治豬肉一斤香豉一斤鹽五合蔥白半虎口蘇葉一寸圍豉汁三升著鹽安鯢中蔡令極熟
焦豬肉法淨礴豬訖更以熟湯遍洗之毛孔中卽有垢出以草痛揩如此三遍疏洗令淨四破於大釜煮之以枸掠取浮脂別著甕中稍稍添水數數掠脂脂盡漉出破為四方寸臠易水更煮下酒二升以殺腥臊青白皆得若無酒以酢槳代之添水掠脂一如上法脂盡無復氣漉出板初於銅鐺中焦之一行肉一行擘蔥渾豉白鹽薑椒如是次第布訖下水焦之肉作瑊均色乃止為意飽食亦不館
乃勝燠肉欲得著冬瓜甘瓠者於銅器中布肉時下之其盆中脂練白如雪可以供餘用者焉
焦脈法肥脈一頭十五斤水三升甘酒三升合煮令熟漉出璧之用稻米四升坎先裴薑一升橘皮二葉蔥白三升豉汁凍饋作糝令周醬清調味蒸之炊一石米頃下之也
焦摛法肥鴂治解臠切之長二寸率十五斤肉秫米四升為糝先楚如焦腕法訖以豉汁橘皮蔥白醬清生薑蒸之如炊一石米頃下之
胡池
肉法肥白羊肉生始周年者殺則生縷切如細菜脂亦切著渾豉鹽擘蔥白薑椒華撥胡椒合調適淨洗羊肚之以切肉脂內於肚中以向滿為恨縫合作浪中坑火燒使赤腳灰火内肚著坑中還以灰火覆之於上更燃炊一石米頃便熟香美異常非著炙之例蒸羊法纓切羊肉一斤豉汁和之蔥白一升著上合蔡熟出可食之
蒸豬頭法取生豬頭去其骨煮一沸刀細切水中治之以清酒鹽肉蒸皆口誤和熟以乾薑椒著上食之
作懸熟法豬肉十斤去皮切臠蔥白一升生薑五合橘皮二葉秫三升豉汁五合調味蒸若七斗米頃下
食次曰熊蒸大剝大爛小者去頭腳開腹渾覆蒸熟擘之片大如手又云方二寸許豉汁煮秫米羅白寸斷橘皮胡芹小蒜並細切鹽和糝更蒸肉一重間未盡令爛熟方六寸厚一寸莫合糝又云秫米鹽豉蔥䪥薑切蝦為屑內能腹中蒸熟擘奠糝在下肉在上又云四破蒸令小熟宜肉糝用饋蔥鹽豉和之下更蒸蒸熟擘糝在下乾薑椒橘皮糝在下
裹蒸生魚方七寸准又云五寸准豉汁煮秫米如蒸能生薑橘皮胡芹小蒜鹽細切熬糝膏油塗箸十字裏之糝在上復以糝屈牖纂
之又云鹽和糝上下與細切生薑橘皮蔥白胡芹小蒜置上參箸蒸之既奠開箸磻邊奠上毛蒸魚菜白魚鰭
魚最上淨治不去麟一尺已還渾鹽豉胡芹小蒜細切著魚中與菜並蒸又魚方寸准亦云五六寸下鹽豉汁中卽出菜上蒸之奠亦菜上蒸又云竹籃盛魚菜上又云竹蒸並道
蒸鶉法水和稻穰糟揩令淨研去節與窒灌孔裏使滿溲蘇麵封下頭蒸熟除麵瀉去靈削去皮以刀覩奠之又云夏生冬熟雙奠亦得
