八和齏第七十三
蒜一薑二橘三白梅四熟栗黃五粳米飯六鹽七醬八齏臼欲重
底欲平寬而圓
以檀木為齏臼
杵頭大小與杵底相安可
杵長四尺
平立急舂之
蒜
生薑
橘皮
白梅
熟栗黃
秔米飯先擣白梅薑橘皮為末貯出之次擣栗飯使熟以漸下生蒜
舂令熟次下油蒜齏熟下鹽復舂今沫
之起然後下白梅薑橘末復春令相得下醋解之
右仲法止為膾齏耳餘即薄作不求濃膾魚肉裏長一尺者第一好大則皮厚肉硬不任食止可作酢魚耳切膾人雖訖亦不得洗手洗手則膾溼要待食罷然後洗也
